In this whirlwind world in which we now live, these recipes are the easiest and most enjoyable selections from across the globe. I particularly am attracted to those from France and Italy, for they offer a great variety of selections. Just last night for dinner I tried the Italian pesto / pasta and found it to be wonderful ... so very good that I am now on my way to the grocery again in order to purchase more fresh basil for a second batch of pesto today. Any left-over I freeze in ice cube trays, then wrap individually in plastic wrap, place in plastic bag to use for smaller amounts of pasta at a later date. The author's explanatory remarks and comments at the end of each recipe certainly add to the popularity of this collection .Product details

It's amazing to me that vegetarian cooking can be so delicious and so easy! The recipes are easy to follow and takes minimal time to prepare. This will surely be a favorite!
What's not to like about "The Ethnic Vegetarian!" It contains many of my favorite recipes, including quiche, crepes, cannoli and saganaki. I also enjoyed the "Origin/History" section at the end of each recipe. Looking forward to preparing these dishes for myself and my husband!
